When you are in the type window, choose Super type drop-down and New Type.
If you are doing multiple priorities you can also set a Super type of Priority. Click display > set color to give it a color, you can also give it an icon. Give it a name, and the type window will appear. Now, these could be completely unfounded concerns, and maybe the database changes mentioned in the release notes won't break older installations, but it's something to keep in mind if you do end up installing an older version and things don't work.
